How do I set up Outlook Express 5 to show only the recipients' name instead of the whole list of recipients to whom the e-mail is sent to when the e-mail is opened?

This is done in the To: CC: and BCC: fields.

Address your e-mail to one recipient in the "TO: field and the rest of them go in the BCC: field.

Separate address with a comma ",".

Please don't use this method to try to send SPAM. You won't get away with it....

This is a good trick except that everyone will see the "to name". To avoid this, make a new contact in your address book, such as "undisclosed" or "special person" with your own e-mail address. This "undisclosed" will go in the to field, and all the other names in the bcc field. You will also get a copy yourself, of course.
